I had the same problem: I’ve wanted to keep my food for as long as possible with all the useful nutrients unaltered. Especially in winter the fresh food supplies are low and the available fruits and vegetables are grown in green houses (and the quantity of vitamins and minerals is lower than the ones grown in the fields; plus they aren’t so tasty) or they are plated far away and they are shipped to us (and because the food goes for many miles when it reaches us it not so fresh).

I have read forums, articles, experts opinions and hundreds of foods related Internet pages and I have reached the conclusion that the best way to preserve foods is by dehydration.
Dehydration, unlike canning or freezing, has the minimal effects over the nutritional value of foods. Vitamin A (beta carotene) and C, carbohydrates, fiber content, potassium, magnesium, selenium, and sodium levels are not altered or lost in dehydration.
Calorie values remain the same but the fat and salt content is reduced.
Also dehydrated foods has no pesticides or other chemicals (of course you have to dehydrate only chemicals free food).
How food dehydrators work
The dehydrator removes the moisture from the food to preserve it. Dehydrators heat food at 140 degrees Farenheit in order to reduce foods water content. Water is the ground for bacteria and without it bacteria can’t grow.
This is why food dehydrating is the best way to preserve foods because the food keeps all the vitamins and minerals and it can be preserved for a long period of time. Also dehydrated food occupies less space (aprox. 1/5 the space of wet packed food) which makes it ideas for picnics and trips.
